2019 Rosé

Tasting Notes:

A lively pink Rosé with a sweet-scented nose of rose petal, chestnut honey and candy apple along with fresh notes of pear, honey crisp apple, dried herbs and mandarin orange. The palate is off-dry with balancing acidity, medium body, lots of strawberry, raspberry and red cherry fruit, dried flowers, watermelon and nectarine. Wine Making:

Spring arrived early in 2019, allowing for early and even bud break, flowering and fruit set. This was followed by a warm, yet more moderate summer. The summer heat was enough to produce nicely concentrated levels of ripeness in the grapes and the cool autumn provided conditions for acidity to be retained in the fruit as well, providing the wine with a lively freshness to balance the ripe fruit notes.

All of the grapes were harvested and sorted towards the end of September and beginning of October. Juice from the Malbec grapes underwent very limited skin contact in the presses before making its way into tank for fermentation at low temperatures (14 - 18°C) with specially-selected yeast strains. The other two grape varietals were fermented separately, also in stainless steel tanks. The three wines were blended together in mid-February to achieve an appealing bright cranberry colour and aged for an additional month thereafter. Finally, the wine was stabilized and filtered in preparation for bottling.
